What is the first thing I should do with my turkey?

Keep the fan and beard clean and dry, cool the bird fast to avoid slipping around the cape, and freeze it in a large bag with the feathers smoothed. Do not gut a bird you want fully mounted.

What is the difference between the presentations?

A full strut is the whole bird in display; a quarter mount is a wall piece showing the strutting fan, beard and cape; a fan-and-beard is a plaque of just the tail fan, beard and spurs — the most affordable.

Can I just save the fan, beard and spurs?

You can, but a proper fan-and-beard plaque preserves and displays them far better and lasts a lifetime. Bring them in and we will build you a clean display.
